KAMPOT CRAB MEAT
Ostra Fine Foods now supplies Kampot crab meat from local suppliers in Kampot, Cambodia. Packaging comes in 500gram vacuum sealed packs and a selection of crab meat styles is available.
Jumbo lump crab meat comes from a crab’s swimmer fins. This finer, sweater meat is ideal as a topping for pastas, vegetable dishes and stir-fried dishes. Jumbo lump is also perfect for fresh and vibrant salads.
Flower Lump Crab meat comes from the body. It is smaller in size than jumbo lump. This is ideal product for Crab cakes and dim sum dishes.
Special Lump Crab meat consists of broken pieces of lump meat mixed with smaller pieces of flower meat.
Claw meat comes in a range of styles from different parts of the Crab including- claw lump, claw down, claw leg and claw middle and the finer crab finger meat. It is darker in color and less sweet in flavor than jumbo, flower or special lump. The stronger taste makes claw meat the perfect product for spicier dishes such as Kampot Pepper Crab, curries and baked dishes.
Crab Roe provides a richness and added depth of flavor to any dish it is added to. The delicate orange custard like insides of the Crab is the perfect addition to soups and sauces as well as providing a unique addition to rice and pasta dishes. In Japanese cooking, crab roe is noted for its umami benefits.
